Next, each date is punctured to allow better absorption of the sugar solution. They are then immersed in a sulfite solution for several hours, followed by rinsing and draining. Afterward, the dates are cooked in a 45% to 50% sugar solution for 10 to 15 minutes. Additional sugar is added to raise the concentration to around 62%, and the cooking continues for another 5 to 10 minutes. Once the desired sugar level is achieved, the dates are soaked for 48 hours to fully absorb the syrup. Finally, they are dried, shaped, and packaged to create the final product.
