The production process involves several key steps: material selection, cleaning, cutting, sulfur treatment, rinsing, draining, cooking, drying, shaping, and packaging. This method ensures the jujubes maintain their texture and flavor while being preserved for longer periods.

Key operational points include selecting fresh, plump, and intact jujubes. After washing, each fruit is cut into 30 to 40 pieces, with the pulp being sliced to about two-thirds of its depth without altering the original shape. The cut jujubes are then soaked in a sulfite solution for several hours, followed by thorough rinsing and draining. Next, they are cooked in a 45% sugar solution. After leaching, a mixture of hot and cold sugar solutions is used to gradually increase the sugar concentration to at least 65%. The jujubes are then left to soak for 48 hours before being dried, shaped, and packaged into the final product.

(2) Processing of Candied Dates

The processing flow for candied dates includes material selection, cleaning, sun-drying, puncturing, sulfur immersion, cooking, drying, shaping, and packaging. This technique enhances the sweetness and texture of the dates, making them ideal for snacking or culinary use.

The operation begins with choosing dates that have a good shape and firm texture. They are first sun-dried until the skin turns deep red. Then, each date is pierced and soaked in a sulfite solution for several hours. After rinsing and draining, the dates are cooked in a 45% to 50% sugar solution for 10 to 15 minutes. Additional sugar is added to raise the concentration to 62%, and the dates are cooked again for 5 to 10 minutes. Finally, they are soaked for 48 hours, dried, shaped, and packed to complete the finished product.

Both processes emphasize careful handling and precise control over temperature, time, and sugar concentration to ensure high-quality results that retain the natural flavor and nutritional value of the fruits. These traditional techniques have been refined over time to meet modern food safety and quality standards while preserving the essence of the original ingredients.
