Peanuts are a nutrient-dense food, rich in healthy fats and high-quality protein. The protein content of peanuts is comparable to that of animal-based proteins, and it even surpasses that found in milk, pork, and eggs. Importantly, peanuts are cholesterol-free, making them a heart-healthy option. In the realm of plant-based proteins, peanut protein ranks just behind soy protein in terms of nutritional value. Due to their versatility and nutritional benefits, peanuts have been an essential part of human diets for centuries. Traditionally, people have enjoyed spiced peanuts as a flavorful snack. However, homemade versions can be time-consuming to prepare and difficult to store. To address this, soft-packaged spiced peanuts have become a popular alternative. These products are convenient, portable, and offer a unique flavor that remains stable over time, making them ideal for on-the-go consumption. The formula for soft-packaged spiced peanuts includes 0.2% star anise, 0.1% pepper, 0.1% cinnamon, 0.1% galangal, 3% salt, 1% old loquat, 0.4% monosodium glutamate, and 1% sugar. This blend creates a balanced and aromatic seasoning that enhances the natural taste of the peanuts. The production process begins with selecting fresh, clean peanuts free from mold or impurities. After washing, the peanuts are blanched in boiling water for three minutes to remove the outer skin. Next, they are marinated in a seasoned sauce for 2–4 hours to absorb the flavors. Once properly seasoned, the peanuts are weighed, packed into bags, and sealed using vacuum packaging equipment. The sealing parameters are set at a vacuum level of 0.09 MPa and a heat-sealing voltage of 30 kV. Finally, the packaged peanuts undergo sterilization in an autoclave at 121°C for 30 minutes to ensure safety and shelf stability. Quality standards for the final product include sensory attributes such as a distinct spicy aroma, well-balanced flavor, and intact peanut kernels without any broken pieces. The physical and chemical specifications require a solid content of at least 90%, with standard packaging sizes of 200 g or 500 g per bag. Heavy metal limits are strictly controlled, with lead (Pb) not exceeding 0.5 ppm and copper (Cu) below 10.0 ppm. Microbiological testing ensures the product meets commercial sterility standards, guaranteeing safety for consumers.
