5 types of mushroom food

1. Oiled mushrooms. Fresh mushrooms 10 kg, vegetable oil 3 kg to 5 kg, 400 grams of salt. Heat the oil into a hot pot until it reaches 80% of the heat. Put the fresh mushrooms that have been washed and drained into the pot, add salt, and fry for 10 minutes. While hot, pour oil and mushrooms into the container. After cooling, the bottles were sealed and placed in a cool place for storage. Oiled mushrooms can be stored for 1 year. The cooking method is the same as that of fresh mushrooms.
2. Sweet and sour mushrooms. 100 kg of fresh mushrooms and 10 kg of salt. Press a layer of salted layer of salted mushrooms into a bucket or a cylinder. The top layer is salted with 1 kilogram to 2 kilograms, covered with bamboo rafts, and pressed with stones. Remove after 24 hours and drain the brine. Soak the semi-finished product in water for 12 hours, remove it, drain it, and put it in the tank. Add half the weight of the semi-finished product vinegar, dip for 12 hours, remove and drain the vinegar, pour the mushroom into the jar, sprinkle the same weight of white sugar, mix well, seal and dip the sugar solution after dipping for 3 days. Pour sugar into the pot, add the impregnated mushrooms, cook over low heat, and stir continuously. After boiling, remove the mushrooms, spread the air, and pour out the sugar to make it cold. Finally, the mushrooms are poured into a cold sugar solution to obtain a finished product.
3. Mushroom pickles. Fresh mushrooms 20 kilograms, cabbage, celery, lettuce, carrots, green peppers each 4 kg, ginger, white wine, pepper 500 grams, a little sugar. The mushrooms and vegetables are washed and drained. The celery is cut into small pieces 2 to 3 cm long after the leaves are removed, and the other materials are cut into strips or sheets 5 to 6 cm long. Ingredients and pepper, liquor, ginger, sugar and mix well, into the kimchi jar, pour kimchi water (800 grams of salt per 10 kilograms of water), stamped in the top of the tank filled with water seal. Sealed, naturally fermented and ready to be taken out.
4. Bad stained mushrooms. Take 100 kg of washed and dried mushrooms, plus 100 kg of distiller's grains, 7 kg to 8 kg of salt, and seal it for 1 month.
5. Mushroom pickles. Fresh mushrooms 100 kg, salt 10 kg to 15 kg. The salt was mixed with brine, and the mushrooms were immersed in salt water, sealed and marinated for 7 days, and turned twice during the period. After draining the mushrooms and draining the brine, soak it in clear water for 1 day and put it in a sauce jar. The sauce is used at a ratio of 50 kg to 70 kg per 100 kg of sweet bean paste.
