Hefei Gongda tackles key technical problems in processing watermelon juice drinks

In the past, melon farmers often had trouble brainwashing watermelons that could not be sold. Today, watermelons can be processed into natural beverages to bring them a gospel. These days, they were developed under the supervision of Prof. Pan Jian, Institute of Bio-Electrical Engineering, Hefei University of Technology. The "preliminary research on key technologies for watermelon beverage processing" passed the national appraisal. Experts agreed that the project has successfully solved the key technical problems in the processing of watermelon juice feed, and its original ultra-high pressure dynamic sterilization process has reached the international advanced level. China's watermelon planting area is wide, the output is large, and the supply is sufficient, but the utilization rate of processing is low, and the waste of resources is serious. Since the watermelon juice is a low-acid heat-sensitive drink, sterilization conditions are demanding, and it is extremely difficult to process and utilize the traditional process. The project team uses ultra-high pressure dynamic sterilization process, can maximize the killing of harmful bacteria, retain its nutrients and biological active ingredients, maintain the natural flavor, color and texture of watermelon juice, extend the shelf life of finished products. The design of the ultra-high pressure vessel with its composite structure has improved the hygiene conditions of foods. The use of mixed watermelon juice and internal white peel juice has increased the juice yield of watermelons to more than 75%. The completion of this project will enable the industrialized production of natural watermelon beverages and will promote the efficient use of agricultural resources and the transformation of high added value, especially for the economic development of the central and western regions.
